Gallagher’s Boxty House
Company background:
Gallagher’s Boxty House is a family run restaurant located in Dublin’s Temple Bar. It was established in 1988 by Pádraic Óg Gallagher. “Our passion for Irish Produce drives everything we do. Hand made with fresh potatoes to an age-old recipe, our Boxty Dumplings are a unique way to bring a real taste of Ireland.”
Challenge:
The company wanted to convert some of their most popular restaurant dishes into ready meals for the retail market as a response to Covid-19 as it already has in place a great team of talented chefs who produce excellent quality products and a wide range of large-scale equipment which could be utilized to produce the ‘Boxty’ premium ready meal range.
Solution:
To assist with the development of their concept, Boxty House was supported by North West Regional College (NWRC) Business Support Centre (BSC) through the Innovation Boost programme which is funded by InterTradeIreland.
NWRC Foodovation Centre Manager Stella Graham worked with the company on the 18 month project to establish a structured New Product Development (NPD) system within the business to enable it to develop a range of ready meals with a strong focus on Irish produce and ‘chef led’ production which has seen the business go from strength to strength and establish partnerships with some of the large Irish retailers and also the launch of their product range in Lidl.
Impact:
On completion of the project the company was able to develop a range of premium ready meals targeting the tourist and export markets.
